Meat pie, © TQ/ D. LafondFor the last number of years, Normand Laprise and Martin Picard have lobbied for access to wild game for the restaurant industry, in the spirit of sustainable development. The Québec government, in conjunction with the Association des restaurateurs du Québec, intends to loosen regulations in this regard so that non-hunters, too, may savour such things as white-tailed deer from Anticosti Island and snow goose. Traceability and adherence to hunting periods are central to this pilot project.

Québec's gourmet restaurants will therefore be the first establishments in North America to feature game meats on their menus. Initially, a dozen or so restaurants—including the renowned Au Pied de Cochon, Toqué! and Joe Beef—will be hand-picked to promote our wild game, rounding out our selection of regional foods. Perfectly aligned with the current campaign to promote Québec as an authentic, original tourist destination, this pilot project promises to be a resounding success!
